If you’ve ever baked with Red Fife, you know it’s not just any flour — it’s history you can taste.

The Story

Red Fife is Canada’s oldest heritage wheat, first grown in the 1840s by Scottish settlers who carried it across the ocean in a small sack of seed. Those same kernels built the foundation for the hardy prairie wheats that would one day feed a nation. Before modern breeding and hybridization, there was Red Fife — pure, beautiful, and full of flavour.

At Tevah Flour Co., we mill our Red Fife fresh on our traditional stone mill, keeping the germ, bran, and natural oils intact. That means you get flour that’s alive — warm in colour, rich in aroma, and full of the nutrients that nature intended to be there.

Baking Qualities

Red Fife has a personality all its own. The flavour is deep and slightly sweet — think caramel and toasted nuts — and the texture is soft yet strong. It has a medium-high protein content, making it versatile for sourdough, sandwich loaves, pizza doughs, or even pastries when blended with a lighter flour.

Because Red Fife’s protein level sits a little lower than our Hard Red or Hard White wheats, it behaves beautifully as an all-purpose flour alternative. Use it on its own for muffins, cookies, pancakes, or rustic sandwich loaves — or blend it with one of our higher-protein flours to create your own custom bread flour. The result is a dough that’s flavour-forward and strong, yet soft and easy to work with.

Why We Love It

Because Red Fife is an unmodified heritage grain, many bakers find it gentler on the body than modern wheat. Its simpler, old-world gluten structure pairs beautifully with long fermentation and traditional baking methods, yielding bread that feels as good as it tastes. When we bake with it, the smell alone makes us pause — nutty, warm, and nostalgic, like bread that remembers where it came from.

How We Mill It

Our Red Fife is Lightly Sifted, meaning we’ve only removed a touch of the bran for a soft, workable texture while keeping all the good stuff — the flavour, the fibre, the life. It’s a flour that performs beautifully and still feels honest to its roots. You’ll notice your dough feels slightly different — more tender, a little thirstier for water, and wonderfully aromatic.
